Caramel Corn

 

Ingredients

1/4 cup popcorn (3-4 cups popped)

1/4 cup margarine

1/2 cup brown sugar

1/2 cup marshmallows

1/4 teaspoon baking soda

 

 

Directions:

1) Pop popcorn (this will already be done)-get 3-4 cups and place in a bowl.

2) Melt margarine, sugar, and marshmallows in sauce pan over medium heat. Stir constantly to prevent burning.

3) Let boil for 3 minutes.

4) Remove from heat. 

5) Add baking soda and stir.  It will puff up rather strangely-don’t worry.

6) Pour mixture over the popcorn and toss like a salad.  Be careful not to break popcorn.

7) Pour onto wax paper to cool.

 

 

Tortillas

Ingredients

2 cups flour

½ tsp. salt

¾ cup water

3 tablespoons olive oil

 

Directions

1)      In a large bowl, combine flour and salt.  Stir in water and oil.  Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough.  Let rest for 10 minutes. (This step can be skipped or shortened)

2)      Divide dough into eight portions.  On a lightly floured surface, roll each portion into a 7 in. circle.

3)      In a large non stick skillet coated with cooking spray, cook tortillas over medium heat for 1 minute on each side or until lightly browned. 

 

 

 

 

Baking Powder Biscuits

 

Ingredients:

2 cups flour

1 tablespoon sugar

3 teaspoons baking powder

1 teaspoon salt

½ cup shortening

¾ cup milk

 

1) Heat oven to 450.

2) Mix flour, sugar, baking powder and salt in large bowl. Cut in shortening

using pastry blender or criss crossing 2 knives, until mixture looks like fine

crumbs.  Stir in milk until dough leaves side of bowl (dough will be soft and

sticky).

3) Place dough on lightly floured surface.  Knead lightly 10 times.  Roll or

pat ½ inch thick.  Cut with round cutter.  Place on pre-sprayed cookie sheet.

4) Bake 10-12 minutes or until golden brown.  Serve warm with butter or any

other toppings you may bring in.


Monkey Bread

 

Ingredients:

 

  • 3 cups flour                                                              
  • 4 tsp baking powder
  • 1 tsp salt
  • 1/3 cup cold butter
  • 1 ¼ cup milk
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1 tsp cinnamon
  • 6 tbsp butter, melted

 

Directions:

 

  1. Heat over to 375 degrees. Generously grease loaf pan or cupcake tray

 

  1. In a mixing bowl, stir together the flour, baking powder, and salt. With a knife, cut the butter into small chunks. Use your fingertips to pinch the butter into the flour mixture until the lumps of butter are about the size of peas. Then stir in the milk

 

  1. Turn out the dough onto a floured work surface and knead it for about 5 seconds. Pull off pieces of the dough and shape them into 2 ½ to 3 dozen golf ball-sized pieces

 

  1. Mix the brown sugar, white sugar, and cinnamon together in a small bowl

 

  1. One at a time, dip the dough balls into the melted butter, roll them in the sugar mixture, and then place them into the prepared pan. Stack the balls on top of one another until the pan is full

 

  1. Bake the monkey bread for 20-25 minutes. You can if the bread is ready by sticking a toothpick into it. If the toothpick comes out clean, the bead is done baking. Set aside to cool for 10 minutes

 

  1. Turn out bread onto a plate using a spatula making sure the pieces of bread stay attached together

 

 

  1. Let it cool slightly. Then pull pieces from it, and enjoy


Buttermilk Pancakes

1 large egg

1 cup flour

1 cup buttermilk

1 Tablespoon sugar

2 Tablespoon vegetable oil

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

 

1.       Turn on griddle to 375. Spray with cooking spray if necessary.

2.       Beat egg in medium bowl with whisk until fluffy.  Beat in remaining ingredients until smooth. 

3.       Pour about ¼ cup batter from cup or measuring cup onto hot griddle.  Cook pancake until bubbly on top, puffed and dry around edges.  Flip to cook other side until golden brown.

4.       If adding chocolate chips, blueberries, etc, add after all other ingredients are mixed.
